In these tough economic times, isn't it nice to know that the price of crystallized ginger at Millenium Market hasn't gone up in the past year?

Last year's Triple Ginger Spice cookies were vegan, but this year I forgot myself and threw an egg in. Sorry, vegans! I slipped up when I used all vegan "butter" (no vegetable shortening), too, which changed the look even further. They're much thinner and flatter this time. Here are last year's cookies, for comparison. They taste great both ways.

p.s. The recipe is here. To make these vegan, I meant to use applesauce instead of egg (worked great last year). I also add fresh ginger.
