I'm returning to this long-inactive snack blog in the midst of a global pandemic in order to share what I'm baking for the <a href="http://snackreligious.blogspot.com/p/cookies.html" target="_blank">annual Cookie Party</a> I can't have this year... or, at least, I can't have it indoors in my apartment. </span><p></p><p><span style="font-family: arial;">Instead, I've decided to bake a smaller amount of goodies and offer them in a takeaway package to friends in the area who feel comfortable receiving them. I know there are those who may be wary of homemade cookies or anything from a non-commercial kitchen, temporarily or permanently, but for those whose comfort levels allow it, I am happy to wash my hands 1,000 times, make treats, and share what I've made. </span></p><p><span style="font-family: arial;">For the record and for the edification (yes, this information will improve you educationally) of our takeaway "guests," I will share here this year's menu and photos of the cookies. If I only posted the contents of our CSA share each week, you'd get an idea of what we receive from our farm. When I also post about most of what we make and eat each week, you start to get the bigger picture of what sort of value this represents in our lives. Because I'm willing to admit to you there are items that go to waste, we can further evaluate the pros and cons of getting an unknown quantity of mystery produce every week.<br />
<br />
This week, almost halfway through our season, I wanted to mention another factor in our CSA consumption -- we don't always use everything in a share during the week it is received. I have tried to address this in past years' CSA coverage, and accounting for "carryover" produce becomes a bit of an issue (as I try to keep straight what's in the fridge from which week). I promised myself I wouldn't stress out over that detail this year, as I'd rather provide you with <i>some</i> coverage, rather than get overwhelmed and stop posting altogether because I can't do it with perfect accuracy.<br />
<br />
But I did think that this point in the season might be a good time to fill you in on what we <i>actually </i>have in the house at the start of Week 11. Things start to get lost and go to waste at a faster rate around now, as the share size peaks, so this is also a good exercise for me -- so that I see what I still have to use up.<br />
<br />
I'm not just listing the items from this week's pickup below, but all of the CSA produce currently in the house. This will include "pantry staples" that last well (onions, garlic), as well as some items that I discover need to be tossed.<b> </b><br />
<br />
<b>CSA Produce in our House as of Week 11</b><br />
1 yellow plum<br />
5 doughnut peaches<br />
5 round peaches -- one of these needs to be eaten immediately, as it has a large brown spot. I'll get right on that.<br />
3 onions<br />
3 heads of garlic (raw)<br />
half a head of garlic (roasted)<br />
1/2 pint blackberries<br />
3 lbs tomatoes<br />
1 bunch arugula<br />
2 lbs zucchini and yellow squash<br />
1 jar tomato puree (from our winter CSA), newly opened<br />
9 carrots (5 small ones are old and jiggly, so I tossed them in the trash)<br />

1 bunch kale<br />
about a cup of butternut squash puree (from our winter CSA), thawed yesterday<br />
1 floppy cucumber (tossed it)<br />
6 ears of corn<br />
two 12-oz bags of collard greens (from our winter CSA, frozen)<br />
12-oz bag green beans (from our winter CSA, frozen)<br />
12-oz bag kale (from our winter CSA, frozen)<br />

About 8 oz. corn kernels (from our winter CSA, frozen but open) -- I often include this in toddler lunches. I put it in the lunchbox frozen, the lunchbox is stored in the fridge at school, and it's thawed by lunchtime.<br />

See? I totally didn't realize there were more carrots and a lone cucumber in there. If I'd done this last week, they might not have gone to waste. I'll have to remember to take inventory more often. Also, I should use some of the greens in the freezer before our frozen salmon share shows up! I'm going to need some of that freezer space.<br />

I was very near quitting this "blogging about vegetables" folly altogether when I realized I was a month behind in CSA posts. Looking back, I can't quite distinguish one week from the next. Around mid-summer, the vegetables start to blur together a bit, and my phone gets overrun with photos that all look like salads or sauteed vegetables covered in cheese. "Is that eggplant?" I found myself asking Dan about one picture from his phone. "No, I think it's mushroom," he replied. Exhausting! <br />

But I'm soldiering on in the interest of at least <i>suggesting</i> what we <i>might</i> have eaten, and I'm nearly caught up. Let's take a fuzzy look back at last week, and then never speak of this debacle ever again.<br />

Cucumbers are a bit iffier a proposition. Halved (and pitted) plums are generally a good bet. Corn is a favorite, too.<br />

That said, this was a perfectly respectable omelet (looks like turkey burger and feta made an appearance) and I hate that I seem to have damned it with faint praise. This is the week that time forgot...or something. I cannot find any photos dated from this week, and none of these vegetables are particularly memorable. What did we do with that eggplant? Did all of these veggies just sit in the fridge until week 8? <br />

I think we also ate some carrot sticks. And the onions keep <i>practically</i> forever, so there's no rush on them.<br />

We definitely ate the fruit as-is. Is that cabbage still in there somewhere? Dear, dear.<br />

Apparently I wasn't the only person who let things slide in week 8... Not only am I a few weeks behind in posting this update, but the CSA I belong to didn't post the share contents for week 8 on their blog or Facebook page, so I'm going off the photo I took at pickup that week.<br />

Fruit that week was apricots, blueberries, and plumpricots/pluots. I remember that the apricots were excellent, and approved by all ages (as pictured above), but the plum-apricot hybrids were kind of mealy and low on flavor.<br />

<b>Creamy Coleslaw </b>- Though we live on opposite coasts, through the magic of the Internet, my friend Angela and I both spotted <a href="http://www.seriouseats.com/recipes/2013/07/creamy-cole-slaw.html">this recipe</a> on Serious Eats on the same day. She sent the link to me shortly after I'd texted it to Dan suggesting it for some of the cabbage in the refrigerator. You might remember from my Week 5 wrap-up that we still had that week's cabbage hanging around, too. Being faced with twice the cabbage tested the resolve of my coleslaw boycott, and reading <a href="http://www.seriouseats.com/2013/07/the-food-lab-how-to-make-the-best-creamy-cole-slaw.html">the long article describing how to make this cabbage</a> both (a) convinced me we should give it a shot, and (b) told me we wouldn't be following the instructions precisely. All respect to the Serious Eats blogger, but that's too much work for coleslaw if you're (I'm) not really sure you (I) even <i>like</i> coleslaw.<br />
<br />
All that said, Dan's less precise approximation of this recipe turned out great! It actually was what I consider the perfect blend of tangy, creamy, and chewy. We ate it as a condiment on some sausage-and-English-muffin sandwiches the next night, and I still liked it as leftovers in my lunchbox a couple of days later. <br />

<b>Warm Salad of Grilled Swordfish, Summer Squash, and Feta - </b>Standout of the week! Best of 2013! Here's another <a href="http://www.myrecipes.com/recipe/warm-salad-squash-swordfish-feta-50400000129460/">Cooking Light recipe</a> that translated beautifully to our amateur hour dinner. I have been, historically, a bit intimidated by the process of cooking fish (yeah, I know it's silly), but Dan and I are both working to improve our seafood-searing skills. So when I saw this featured in what I think is the current issue of the magazine, I added it to my recipe file for consideration. I'm so glad it made the cut.<br />
<br />
Speaking of cuts, the wild-caught swordfish steaks I bought were way too thick to cook through in the time allotted, so we had to cut them up midway through the process. <br />
<br />
Otherwise, this dish was really easy to put together, the flavors were intensely pleasing, and it was also easy to disassemble into component parts our toddler was willing to eat (pasta, fish, feta). <br />

<b>Black Raspberry Ice Cream </b>- That video looks a little NSFW at first, right? Dan and Sebastian did the work, but I had the good idea. I think this one may have been inspired by another <i>Cooking Light</i> article, but the recipe was in the pamphlet that came with our ice cream maker. Yum.<br />

<b>Braised Cabbage -</b> I can't possibly imagine eating two heads of cabbage in one week, if they were both made into coleslaw, so I needed an alternative for our second head of cabbage. I was thinking it should be less labor-intensive than stuffed cabbage rolls, and braising occurred to me, so I Googled off in that direction. That led me to <a href="http://www.chow.com/recipes/10712-braised-red-cabbage-with-bacon">this Chow.com recipe</a>, which seemed well-received by commenters on the page. I liked that it included some Dijon mustard (I like Maille) along with the brown sugar. I used 3 CSA onions in the recipe, along with a head and a quarter of cabbage (one quarter left over from the slaw).<br />
<br />
The end result made me pretty happy. The apple cider vinegar left it sauerkraut-esque, which is a compliment, if you ask me. It was also smoky and bacon-flavored, creamy with onion, and had a good sauce beneath it for crusty bread-sopping.<br />

<b>Gazpacho </b>- Mark Bittman's gazpacho recipe is very simple. <a href="http://markbittman.com/sunday-supper-gazpacho/">Here's a version of his formula online</a>. This is a great summer dish not just because it's served chilled, or because the tomatoes are seasonal, but also because you don't have to turn on the stove or oven to prepare it. Dan combined Bittman's recommendations with those of the gorgeous Spanish cookbook <a href="http://www.phaidon.com/1080Recipes/"><i>1080 Recipes</i></a>. Basil and cilantro, garlic and green onions all play important roles. Gazpacho is sort of "our dish," as Dan and I made 5 gallons of it the night before our wedding -- just over 12 years ago -- to serve at the reception. Romantic, right?!<br />

</b> <b>Regular Basil and Chicken Salad -</b> <i>Cooking Light </i>strikes again, but this time it was just the inspiration. I think Dan glanced at <a href="http://www.myrecipes.com/recipe/grilled-chicken-thighs-thai-basil-salad-50400000129500/">the recipe</a>, then struck out on his own. This was supposed to be made with Thai basil, but we didn't have Thai basil. The regular basil was pretty strong, so Dan added a small head of lettuce (maybe left over from Week 5? Or a bonus we weren't aware of in Week 6?). I'm not sure what his chicken marinade was, but I do believe it included lime and fish sauce. I don't think I really want to eat a lot of raw basil salads without other greens in there, but I appreciated the change.<br />

<b>Cherry, Watermelon, and Limeaid Popsicles -</b> This is too simple to need a recipe. It was fun licking through the frozen limeaid and watermelon juice to get to the CSA cherry prizes inside. I managed to do a semi-fancy, slanty thing with one of them, by tipping the ice-pop maker up and resting one end on a wooden cutting board so that it sat on a diagonal, then letting the limeaid harden a while before pouring in the watermelon juice.<br />

</b> <b>Pickled Cucumbers - </b>Some dill just barely hanging on from Week 5 made it into this jar, along with the cucumbers from Week 6. Our friend August shared the recipe we used:<br />

peppercorns<br />
cardamon seeds<br />
dried hot pepper<br />

Stuff jar.<br />
Boil vinegar and sugar.<br />

Perfect in a few hours when it cools. </blockquote>Go for it! These were pretty sour (and we skipped the hot pepper), but everybody loved them. They're good on a sandwich (really improving a slightly dull one) or on their own.<br />

<b>Summer Squash, Carrot, and Blueberry Muffins -</b> These were made on Saturday afternoon, after we picked up Week Seven's share, so I included some Week 7 carrots in the mix. The squash was past its prime, but still shredded well in the food processor. I threw CSA blueberries in on a whim, adding them as I finished stirring the dry ingredients into the wet.<br />
<br />
<a href="http://www.gimmesomeoven.com/carrot-zucchini-muffins/">Here's the recipe</a> (we subbed yellow squash for green, and doubled everything; no nuts). Lighter than carrot cake, they're moist like a good zucchini bread, and the blueberries pop pleasantly in the mouth. They may not be technically "healthy," but I am happy to pretend eating them is somewhat virtuous.<br />

While we were making them, Sebastian told me he wasn't going to like them, but he was wrong.<br />
<br />

Okay, I just have to interrupt myself here to say that the classical music radio station I'm listening to while typing this is now suddenly playing Jingle Bells. Is that because it's been so hot we're wishing for winter? Or has someone fallen asleep at the switch?<br />

Despite the brutal heat in NYC this week, <i>I'm</i> not wishing for winter. I'm too into these summer vegetables and fruits. So, without further ado, descriptions of what we et last week begin . . . NOW.<br />

<b>Cucumber Sesame Salad </b>- We were invited to an impromptu backyard-baby-pool-and-salads potluck party, and this is what I pulled together to take as our dish. I found <a href="http://www.cookinglight.com/food/quick-healthy/quick-easy-side-dish-recipes-00400000058734/page12.html">the recipe</a> in an issue of <i>Cooking Light</i> magazine. It called for miso or low-sodium soy sauce, and I didn't have any miso in the house, so I used the latter, but I'd love to make it again with miso. It was very good, and I think miso might make it "next level," if you will grant that a cucumber salad could be "next level." <br />
<br />
Instead of toasted sesame seeds, I actually used a toasted sesame seed and salt mixture called gomashio. <a href="http://herbivoracious.com/2010/03/gomashio-japanese-sesame-seed-salt-condiment-recipe.html">You could make your own</a> if you can't find it in stores (or are the sort of person inclined to make your own condiments). It added a depth to the dish that I appreciated.<br />

Side note: Have I mentioned how glad I am to have a subscription to <a href="http://www.cookinglight.com/magazine/"><i>Cooking Light</i></a>? If you're like me, you might be put off by the "Light" in the title. For years, I assumed it was a "diet" magazine, and I'm mightily suspicious of the diet industry. But, thanks to a post recommending this magazine to food-lovers on the <a href="http://chowhound.chow.com/boards/31">Chowhound home cooking board</a> (a great place to find ideas for CSA veggies, by the way), I know now that I can blithely ignore that "Light." It really just means "healthy," as far as I'm concerned. Over the past few years, I've found each issue to have really approachable ideas, attainable ingredients, multiple recipes I want to <i>and am able to</i> make -- in the time I've allotted myself in life for cooking, if you know what I mean -- and it has a focus on seasonal produce that keeps me subscribing. Above is a picture of my recipe file. Most of the pages from magazines have been ripped out of <i>Cooking Light</i>.<br />

p.s. No, the <i>Cooking Light </i>people didn't put me up to this. I've never gotten one red cent from them, and they have no idea I exist. But I love them anyway.<br />

<b>Tatsoi and Kale Rice Bowl</b> - Dan put this dish together. I couldn't really detect the difference between the tatsoi and kale, once it was all cooked together, but I suspect the tatsoi may have been responsible for some slightly more tender bites. There was also some chicken in here, and maybe some garlic scapes, as well as dried (soaked) mushrooms and soy sauce. The leftovers were good for two or three days, though the chicken got a teeny bit chewy with reheating.<br />
<br />
I like having dried mushrooms in the house. They've been working well with off-the-cuff CSA dishes.<br />

<b>Apple Cider Blackberry Popsicle </b>- Look, I tried to talk the kid into a more seasonal beverage, like lemonade, to pair with the CSA berries, but he's a fiend for both Halloween and apple cider. We made several of these with our <a href="http://www.zokuhome.com/">Zoku</a> (again, not a paid advertisement; I got two as a gift from my Aunt Debbie) and they were yummy! The best news is that the kid gets full before he eats a whole popsicle, so I "have" to help. <b>Chai-Spiced Carrot Cake, topped with blueberries</b> - If you've read past years' posts (and you should, because I used to have a lot more time to blog thoughtfully and creatively!), you may know that I make a carrot cake every year around the beginning of July. That's because it's Dan's preferred birthday cake, he happens to have a birthday every year in early July, and I aim to please.<br />
<br />
I really think the <a href="http://www.cooksillustrated.com/">Cooks Illustrated</a> recipe I use (online <a href="http://youknowwhatyououghtado.blogspot.com/2011/04/cooks-illustrated-carrot-cake-and-cream.html">here</a>) results in the best carrot cake of any I've tried, and lately I've been using the 2005 print issue's "chai spiced" variation, which includes a good amount of black pepper and cardamom. Sebastian said "no nuts," when asked to weigh in on that option, and he's a boy after my own heart. I was happy to oblige. I like nuts, but not so much IN cake.<br />

New this year was my idea to top the cream cheese icing with CSA blueberries. Yes to blueberries on carrot cake! By the way, in case you're wondering if you can accidentally use a whole stick of butter in your cream cheese icing (instead of 5 Tablespoons) and still have it taste good, that answer is also yes. Yes, yes, yes! Everything is yes (except for nuts, which is no), when it comes to this cake!<br />

<b>Black Currant Jam on Toast</b> - The jam the farm sent us is excellent. My "secret" to toast-making is to use slightly more butter than necessary. Butter it IMMEDIATELY upon its emergence from the toaster. Then, let it melt with the pieces of toast sandwiched together (butter-sides-in) before separating your slices and putting on the jam. You probably already do this. It's not rocket science, after all. My secret to a lot of things is to use slightly more butter than necessary. I'm pretty sure this doesn't even technically qualify as a secret.<br />

<b>Blackberries and Whipped Cream</b> - Most of our CSA cherries and blackberries were devoured raw, but a few made it into some whipped cream we happened to have in the house (leftover from introducing our son to the classic banana split). My shame: it's not homemade whipped cream. It almost always is, I swear! I wasn't the one who went to the store!<br />

<b>Scrambled Eggs with Spring Onions and Garlic Scapes</b> - I'm not sure where the spring onions were from. Maybe left over from week 4? At any rate, they weren't too wilted, so I sliced them into rounds (greens and whites) and sauteed them in butter until they almost melted, then scrambled some eggs on top of them. When the eggs were almost cooked, I cut up and added the grilled garlic scapes (grilled on an indoor grill pan that <i>may</i> have still had some sausage grease on it). Sebastian thought the scapes were green beans; he's so unsophisticated!<br />

<b>Simple Salad</b> - It looks dull. It wasn't. These fresh lettuces we keep getting are so delicious and tender they hardly need anything added to them. Dan dressed this week's head with lemon juice, walnut oil, and coarse salt. I couldn't stop eating it.<br />

<b>Garlic scape and basil pesto </b>- Dan's been whipping up pestos for the past few years, and he's gotten pretty good at them. Garlic scapes make for a slightly unusual pesto, but it's one we always enjoy. The flavor is brighter and it tastes like summer. This week, a bunch of basil arrived in our share, so he was able to include that as well. It meant the pesto tasted a bit more "traditional," but the garlic scapes still shone. Our two-year-old chose the pasta shape, which I guess counts as "helping," and he seemed pretty pleased with the end product as his dinner.<br />

<b>Simple salad of lettuce, cheese, and homemade croutons - </b>The dressing for this was made with vinegar, oil, and bottled artichoke hearts.<b> </b>Not very exciting, as salads go but still tasty as a side dish. I'm so into homemade croutons. They're easy to make, and I kind of just want to eat them like popcorn.<br />

<b>Broccoli and pesto pasta salad </b>- Dan took the leftover pasta with pesto from dinner the night before, then added olives, tomatoes, cheese, one head of the broccoli (quickly boiled, then shocked in ice water), and Italian salad dressing. This held up really well as a supplement to lunches over much of the week.<br />

<b>Butter-braised daikon radish </b>- I wanted to like this. I really did. Sigh.<br />

I'm getting ahead of myself here. But this was the flop of the week. I had considered making one of many recipes that call for daikon raw (often shredded), but I just wasn't feeling motivated to eat them that way. I remember making butter-braised radishes a year or two ago, and really enjoyed them. They had come out both smooth and juicy.<br />
<br />
Then, before I had quite decided what I was doing, I impulsively boiled the daikon radishes along with our CSA beets, thinking I was killing two birds with one stone ... and found I was stuck. Boiled, the daikon had an unappetizing smell and texture.<br />
<br />
I still wondered if braising might sort of work, at least to impart a little more flavor. I sliced the boiled radishes into coins, then simmered/braised them in chicken stock and spices until they almost tasted great. But they never lost their bitter edge. I tried splashing on some lemon juice, as suggested by Mark Bittman. Still bitter. Incredibly bitter. Throw-them-into-the-trash-after-hopefully-eating-half-of-them bitter. Sigh.<br />

<b>Beets with goat cheese/Kale salad with beets </b>- Two-ingredient dishes that taste good are rare, so the fact that I can put beets and cheese in a bowl and enjoy it makes me happy. We alternate between boiling and roasting the beets to cook them. These were boiled, as you know from my sad, sad daikon story, but not to oblivion. Ultimately, they ended up working in three different dishes. On their own, the beets and cheese were creamy and mild. Later that day, added to kale and lemon juice, they enhanced the texture of the greens...<br />

<b>Blue tacos, featuring chicken, kale salad and beets - </b>... and the next day, leftover kale and beet salad topped chicken-<a href="http://en.wikipedia.org/wiki/Sofrito">sofrito</a> tacos in blue corn shells. Dan added more cheese (queso blanco, this time), which melted under everything in a tantalizing way. I think I ate more than my share of these, and I would happily have eaten more. Winner!<br />

<b>Cheese, onion, and broccoli quiche</b> - A quiche seemed like a good way to use up CSA leftovers at the end of week four. This one had spring onions, a head of broccoli and the remaining 3 or 4 garlic scapes, as well as 4 oz. of shredded cheddar cheese and a tiny bit of red pepper. I also used the last of our batch of farm-fresh eggs. I think, if I made it again, I'd cut the broccoli a bit smaller and steam it first (I just sauteed it in a pan for a few minutes). The scapes and onions were so good on their own, I think I might leave the broccoli out entirely. I'd also cook the whole thing an extra 5 minutes. I followed Mark Bittman's instructions to take it out of the oven when the center was still a bit wobbly, but the eggs inside still were (not raw, but) slightly runnier than I prefer.<br />
<br />
The pie crust here is Bittman's "whole wheat savory" crust, meaning that I left out the sugar and used 1/2 cup of wheat flour along with the white. I really like his pie crust recipe. It's easy to make and to work with, and this was sturdy enough to go underneath a wet-custardy base without problem. <br />

Addendum: I decided to admit to you that I threw out a bit of this week's lettuce salad (gone mushy in the fridge) and most of Week Three's slaw (way past its prime) today. I'm just not a big fan of coleslaw, and we couldn't get through a whole head of cabbage + a whole head of radicchio that way. We won't be making that much coleslaw again. The ends of the spring onions wilted badly before I got to them, too. But, all in all, I do feel good about the amount of vegetation we made it through, and I'm always working to have less waste. Dan made some chicken stock last week, and it was definitely improved by the vegetable trimmings I've saved in the freezer thus far.<br />

<b>Breaded Broccoli </b>- I got the idea for this from Mark Bittman's <i>How to Cook Everything</i> phone/iPad app, but it couldn't be much simpler. Barely boil your broccoli florets and chopped stems, shock in ice water, then pat dry. Next, roll in thin coatings of flour, egg, and breadcrumbs (in that order). Finally, pan fry in a lot of butter. Salt and pepper well, then eat like popcorn. Pretty darn good! I'd spice the breadcrumbs if I made this again (which I may).<br />

<b>Sauteed Japanese turnips</b> - How predictable -- I turned to <a href="http://food52.com/recipes/17634-yoshi-s-japanese-turnips">this recipe</a> for a third time. I'm really into it. This time, however, I left out the herbes de Provence, used garlic scapes instead of garlic, and reduced the amount of soy sauce (increasing the water). Also, because the turnip greens had gone limp and yellow by the time I got to this vegetable, I used beet greens from week 4's share instead. It was the best iteration yet!<br />

If you read the posts about last week's share, you may remember that I did my volunteer shift and took home some extra vegetables during week two. I wanted to let you know that I did, in fact, try the bok choy skillet supper recipe I found online. It uses bulgar wheat, which I'd never cooked with before -- but which is very easy to prepare. It was pretty quick, too. Most of the time spent on this dish is in cutting and chopping veggies during prep. Finished, it was surprisingly flavorful -- especially considering some of the online reviews suggested it wouldn't be. Since I had "full-sized" bok choy (the recipe calls for baby), I just cut the greens off and arranged them alongside the stalks in the pan.<br />
<br />
Modifications: We are not vegetarians, so we used chicken stock (which changes the flavor), and we also subbed in portobello mushrooms (chopped) for the button mushrooms. I also doubled the tomatoes, and it could have handled even more. Our skillet is pretty large. Oh, and I "cheated" when it came to the garlic-infused oil, by doing it on the fly with some smashed cloves of garlic in the pan with olive oil. I removed them before finishing the dish (and ate them on their own: yum!). This dish used up our remaining bok choy and garlic scapes (I used the scapes in place of shallots). Top with a drizzle of soy sauce.<br />

</span> <span style="background-color: rgba(255, 255, 255, 0);"><b>Zucchini and grilled garlic scapes on flatbread - </b>Dan conceived of and made these sandwiches with pocketless pita bread. He sauteed the grilled scapes and zucchini together before layering them on the bread, then topped them with feta and a homemade yogurt-cucumber-dill sauce. Garlic scapes are mild, and this was lovely.</span><br />

The eggs were as creamy as the melted havarti dill cheese, and the kale gave the dish some texture. I almost made a really embarrassing pun here, it was so good.</span><br />

</span> <span style="background-color: rgba(255, 255, 255, 0);"><b>Bok-and-Broc stir fry </b>- This dish was based on a Mark Bittman recipe for stir-fried broccoli. I made the variation with (soaked) dried mushrooms, added bok choy, and topped with cashews. Frankly, I cooked it too long and it became mushy. I kept waiting for the liquid to evaporate, and it just wouldn't. I also found the finished product a little bland, so I don't think this is a recipe worth repeating. We added a lot of soy sauce and a bit of Sriracha to make it more palatable. </span><br />

<span style="background-color: rgba(255, 255, 255, 0);"><b>Arugula and Lettuce soup</b> (adapted from <a href="http://www.foodnetwork.com/recipes/emeril-lagasse/lettuce-soup-recipe2/index.html">this</a> recipe) - The recipe for this soup is attributed to Emeril Lagasse. I added an extra cup or so of chicken stock (I just used the whole box) and two bunches of arugula (because I only had one head of lettuce). I also adjusted the herbs, using dried tarragon and parsley to taste (along with fresh garlic and chives), and about 1/2 tsp. of <a href="http://www.penzeys.com/cgi-bin/penzeys/p-penzeyscrouton.html">Penzey's Sandwich Sprinkle</a>. The cream is definitely the kicker. It's a good soup before the cream goes in, but it's a great soup after.</span><br />

</span> <span style="background-color: rgba(255, 255, 255, 0);"><b>Yoshi's Japanese Turnips </b>(recipe online <a href="http://food52.com/recipes/17634-yoshi-s-japanese-turnips">here</a>) - The advice at our share pickup for Japanese turnips was to eat them raw. They're not bad that way, but I wasn't in love with them, so I looked online for a way to cook them and thought this recipe had promise. The verdict? This dish is going in my "Best of 2013" recipe list. I honestly never thought I'd enjoy a turnip as much as I enjoyed these. The recipe suggests you try different combinations of "cooking liquid," and I look forward to making this again with vinegar. For my first try, I used half Tamari soy sauce (definitely should have been low sodium) and water. With cheese or without, and even a bit too salty, this was a revelation.</span><br />

<b>Zucchini pancakes</b> - I used Mark Bittman's recipe, but didn't have time to chill the patties, so they didn't quite hold together in the pan. For the most part, though, these are dead simple -- zucchini, onion, egg, salt, pepper, parmesan and breadcrumbs. Fry in an awful lot of butter. We topped them with more cheese, of course. Despite declaring, "I don't like squash," even the kid ate (and enjoyed) it. <br />

I do have a few bits and bobs bouncing around in the fridge -- a few more scapes, another bunch of turnips, and that extra head of bok choy -- so I'm looking for something that doesn't involve a stir-fry to use up the scapes and bok choy. <b>Chicken Sausage and feta lettuce wraps</b>: After a conversation about stuffed cabbage at the office on Tuesday, I knew I wanted to make more lettuce wraps this year. I think they're a great way to enjoy the crispness and mild flavor of really fresh lettuce. This night, we went super-simple and actually used them as a sort of "hot dog bun" with some <a href="http://www.applegate.com/products/organic-chicken-apple-sausage/">chicken and apple sausages</a> (which Dan sliced in half). Feta cheese as topping was a flavorful accompaniment.<br />

I have started compiling a list of other combinations of ingredients for filling that I'd still like to try, so bring on the lettuce!<br />

<b>Potato Salad with Grilled Green Garlic</b>: Dan combined two potato salad recipes from the internet, and it turned out really good. Normally, I prefer a mustard-based potato salad, but this one was oil-based without being greasy, and had a fennel flavor that was pleasantly surprising. The green garlic was grilled on our grill pan, and not unlike spring onions. I think I'm coming 'round to warm potato salad.<br />

<b>Pickled Radishes</b>: For this recipe, I turned to the Momofuku cookbook. They didn't discuss radishes, per se, but I mostly followed their formula for quick-pickling liquid. First, I trimmed off the tops and bottoms, then sliced the radishes thinly. Once I put them in a jar, I mixed up and poured this concoction over the top:<br />

1 cup hot tap water<br />
1/4 cup rice vinegar<br />
1/4 cup apple cider vinegar<br />
6 T. sugar<br />
2 1/4 tsp. kosher salt<br />

The recipe suggests waiting several days before eating the pickles, but I have a feeling radishes are harder to "overcome" than some vegetables. They're so naturally sharp, after all. On day one (today) these still had a slight radish smell, which didn't mix particularly well with the smell of the brine, but they didn't taste terrible. I'll try them again tomorrow. I think they'll be better.<br />

<b><br />Kale Salad</b>: Dan's the kale salad pro in our family, but I composed this one myself. I took one head kale (washed, trimmed and sliced into ribbons), 1 lemon (squeezed over the top), a fair amount of kosher salt, "massaged" this with tongs and let it set for a while so the lemon juice could start breaking down the kale leaves. Then we added <span class="st">parmigiano-reggiano cheese, avocado, and sunflower seeds. Dan completed the dish with <a href="http://www.briannassaladdressing.com/product/dijon-honey-mustard/">this</a> dijon honey mustard dressing.</span><br />

<span class="st"><b><br />Bok Choy and Spinach Stir Fry</b>: Dan stir-fried the bok choy and spinach with peanuts, ginger, garlic, onion, and fish sauce. This turned out slightly more bitter than is usual, but I'm very forgiving of stir fry. I love this sort of dish to use up items at the end of the week.</span><br />

Sooooo... that's everything for week one. I think the sausage and feta in lettuce "bun" was my favorite. It's hard to go wrong with sausage, though. That felt like a bit of a cheat. What did you make from seasonal produce (CSA or greenmarket) this week?<br />
